From Lent to Meatballs

Today is Ash Wednesday, the beginning of Lent. This is the way my ADD mind works...Lent makes me think of church, church makes me think of spaghetti supper, spaghetti makes me think of meatballs...so I made baked spaghetti with meatballs...so easy! I'm taking it to my brother Jason as a small THANK YOU for babysitting all Saturday night for Caroline...he did sooo great!

Meatballs by Mollie
(anything that says "by Mollie" means I threw it together with a mix of recipes and my mothers good advice and it came out good enough to share with other people...ha!)

1 lb. of hamburger meat
1/2 cup of parm. cheese (the kraft, powdery kind)
2 tablespoon of garlic powder ..more if you like garlic
1 large egg (2 if they are small)
1 teaspoon of salt
1 teaspoon of pepper
1 cup of italian bread crumbs
2 tablespoons of creamy horseradish (optional...if you like it)


Mix all of this together...after you add the bread crumbs sprinkle some water on them, just enough to make them a little damp (like a tablespoon or two of water)
Mix and Mash the meat
Roll into balls (golfball size or a little bigger)
Spray PAM on a cookie sheet
Bake Meatballs for 10-15 mins. on 415
Turn meatballs onto other side after 10 mins. let cook for another 5 mins. or so...just make sure they are brown... take the fattest one and use it as a tester, just to make sure it is cooked through...and enjoy.

* To make baked spaghetti...just cook noodles and sauce as usual...then add some sauteed onions and green peppers...toss the noodles, sauce, onions, peppers, some shredded cheese,and garlic powder in a bowl. Put all of this in a casserole dish. Add meatballs on top. Cover with shredded cheese (cheddar or motz or whatever you like) Bake until cheese is melted! YUM!
